Detergent - do we need to use anything in particular?  
  
ANSWER: 
For a commercial dishwasher you must use a commercial detergent - This type of detergent is lower in suds & activates much quicker & with a 2 / 3 or 4 minute cycle, it really needs to breakdown quickly to give the required result. Domestic detergents are much slower to activate & are also too high in suds.
